I made Jamaican Rundown chicken yesterday which was lovely and comforting. Today is fajitas made with leftover roast chicken and a lovely, cool salsa made from piccolo tomatoes and sweet mini peppers. Simple and light!

Pesto! I usually make this, later summer, but I'm HUNGRY!
