I am having a lot of issues trying to understand what exactly intercepted houses are and what they could mean. Does anyone have any links or information that can help?
Intercepted Houses are wider from cusp to cusp, they hold the complete 30° of the in between sign with it's neighboring cusps flanking it which are noted on either side cusps. This means...Intercepted Houses are wider from cusp to cusp and contain more degrees thus transiting planets take longer to go through/transit Intercepted Houses. Also because Intercepted Houses have the wider degree span they can hold more planets than other houses. Intercepted Houses are the result of the mathematical calculations done for the certain time a chart is erected. A little while later or before and the Houses wouldn't be Intercepted. It has to do with the situation of the stellar coordinates with earthly longitude for the time of the calculation.
Each astrological Zodiac sign runs from 0° to 29° which is 30°. 12 Zodiac Signs = 360°. You can add up all the degrees on your house cusps, include any 30° intercepted house degrees, and it will always come out to 360°. (60" seconds = 60' minutes = 1° degree). The ring with the house cusps around the outside of a chart represents the earth's horizon and each house cusp is marked with the Astrological Zodiac Sign and degree of its related position to space at the time of calculation. Houses vary in size and get more equal towards the equator.
A slow moving outer planet, Pluto, Neptune and Uranus, will spend its whole 30° for years in an intercepted house of that sign, if that is the case. Faster moving planets spend all their 30° in an intercepted house too but move out sooner. An Intercepted House is wider but it doesn't change the house meaning.

Can you see how all of Libra is contained within my 5th house? It is not the sign on the 5th house cusp or the 6th house cusp
Placidus house system can show intercepted houses, if you have them. I have houses 3/9 intercepted. It's also where my Neptune Jupiter opposition is.
Interceptions bother me on the chart so I just use equal house and then I don't have them haha.
