On 5/7, my progressed ascendant will change from Aries to Taurus, needless to say, I am excited! I’m ready to be in the lovely bovine energy!

I don't know that the transits to you birth chart offer any insight into your progressed chart.
You are going from Mars-ruled to Venus-ruled in your P chart. That's the main thing to consider, regarding the shift.
Congrats, citygirl!! New Ascendant is super-exciting. And it's conjunct your natal Sun which is quite rare, I'd say. AND your progressed Sun is almost conjunct your natal Venus. I'd say you're becoming very, very *YOU*.
